Whole Wheat, Blueberry, and Banana Muffin Recipe (By Request)

These muffins are a good every day staple, and also travel well as a hearty snack and substitution for a hotel breakfast.

Whole Wheat, Blueberry, and Banana Muffin Recipe

Makes one dozen.

Mix together:
  • 2 eggs
  • ½ cup sugar
  • ½ cup canola oil
Add:
  • 1 cup whole wheat flour (Here, Vermont's King Arthur Flour 
  • 2 Tablespoons wheat germ
  • 2 Tablespoons wheat bran
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
Mix

Add:
  • 2 medium to large mashed bananas (ripe bananas are easier to mash)
  • 1 cup blueberries
Line muffin tins with paper liners.

Bake at 400 degrees for 45 to 50 minutes*

*Depending on your oven, cooking temperatures and duration may vary.

  3. I'm looking forward to trying this recipe. Your pumpkin muffin recipe is a favorite in our house - I keep batches in the freezer at all times. I have have both the Botanic Gardens and Botanic Gardens Birds and the only problem is not adding more to the collection!
