Whole Wheat, Blueberry, and Banana Muffin Recipe
Makes one dozen.Mix together:
- 2 eggs
- ½ cup sugar
- ½ cup canola oil
- 1 cup whole wheat flour (Here, Vermont's King Arthur Flour
- 2 Tablespoons wheat germ
- 2 Tablespoons wheat bran
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
Add:
- 2 medium to large mashed bananas (ripe bananas are easier to mash)
- 1 cup blueberries
Bake at 400 degrees for 45 to 50 minutes*
*Depending on your oven, cooking temperatures and duration may vary.

ReplyDeleteI'm looking forward to trying this recipe. Your pumpkin muffin recipe is a favorite in our house - I keep batches in the freezer at all times. I have have both the Botanic Gardens and Botanic Gardens Birds and the only problem is not adding more to the collection!
