Preparing Pea Shoots

There are many ways to prepare pea shoots.  Some suggestions include:
  • Alone and crisp;
  • In a salad with a light vinaigrette;
  • On sandwiches;
  • Sautéed and put into an omelette, quesadilla, or tossed with pasta; and
  • Alongside some grilled tuna or salmon.

  2. If you don't grow them yourself, where can you get them?

  3. Most health food stores have them - Whole Foods, Sprouts, etc. Trader Joe's too. I don't see them at Farmers' Markets for some reason. Maybe because they must be kept refrigerated, or you will have wilted pea shoots.

  4. I've seen them at Bishop's Orchard's Farm Market in Guilford, CT. They are really tasty in salads or sandwiches.

  5. Where I live, Vancouver, we have them seasonally at our farm markets. We also have pea sprouts year round in the Asian markets. They are a bit shorter and are grown hydroponically. They are a very good substitute.
