How Do You Prepare Your Pea Shoots?

  4. They are unbelievably tasty as are shoots of fava beans and sunflowers. Those are the ones I know from our own garden but I am willing to bet other similar shoots are good, too.

  5. Delicious in a salad (alone or with other greens), on sandwiches, or sautéed and put into an omelette, quesadilla, or tossed with pasta.

  6. They are very delicate, so we like them alone and crisp, possibly just alongside some grilled tuna or salmon. --Holly in PA
