Whole Wheat, Blueberry, and Banana Muffin Recipe

Whole Wheat, Blueberry, and Banana Muffin Recipe

Makes one dozen.

Mix together:
  • 2 eggs
  • ⅓ to ½ cup sugar
  • ½ cup canola oil
Add:
  • 1 cup whole wheat flour (Here, Vermont's King Arthur Flour)
  • 2 Tablespoons wheat germ
  • 2 Tablespoons wheat bran
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon cinnamon
Mix

Add:
  • 2 medium to large mashed bananas (ripe bananas are easier to mash)
  • 1 cup blueberries 
Line muffin tins with paper liners.

Bake at 400 degrees for 45 to 50 minutes*

*Depending on your oven, cooking temperatures and duration may vary.

These are appropriate year-round, and across the seasons, different species, domestic and wild, may vie for leftovers.

  2. I made these when you originally posted the recipe. I can say for a fact these are both delicious and satisfying. Haven't tried feeding them to the local fauna, but love your pictures.

  3. I'm so pleased you are "back", Muffy. Being able to interact with you and others with similar interests was a component that was greatly missed. I recently spent some time in England. I thought of you. Also, I wondered what you think of "The Crown" (it enticed me to visit the Churchill War Rooms). Are you excited for Victoria to start? There is going to be a new British cable service for the US in this spring(?)! There will be many shows one cannot see elsewhere.
